No need to add to the winter blues with a toxic hangover. Majken Bech-Bailey, an internationally renowned sommelier and a pioneer in non-alcoholic pairings in some of the top Michelin star restaurants in the world, has announced the launch of BAEK, her new range of non-alcoholic wine alternatives.
Majken’s passion for creating sophisticated alcohol-free options began earlier in her career at Henne Kirkeby Kro, the two-Michelin star restaurant in her home country of Denmark, before moving on to Norway’s acclaimed three-Michelin star Maaemo.
Majken first became known for her innovative non-alcoholic pairings at the two-star Michelin restaurant she co-founded, Aimsir. Aimsir made headlines by going straight to two stars just four months after opening. Majken’s alcohol-free wine alternatives were universally praised by critics and the public alike, earning her a string of hospitality awards.
BAEK delivers the length, depth, and complexity of wine, without the alcohol. While alcohol often plays a central role in how we celebrate moments, enjoy meals and connect, most wine substitutes fall short, largely because they’re made by simply removing alcohol from lower-quality wine. BAEK is made completely differently, where flavours are built up using premium ingredients to redefine the experience, offering a true alternative that matches the richness of wine.
BAEK is specifically crafted for pairing with food, with a multi-layered flavour profile that mirrors wine’s length on the palate, its complexity, and its full-bodied character. BAEK launches with MELLOW and INTRICATE. MELLOW is a non-alcoholic alternative to white wine offering a gentle, honeyed flavour with subtle notes of oak. It draws inspiration from the smooth elegance of a light oak Chardonnay with the sweetness of a Sauternes, making it ideal for leisurely enjoyment. INTRICATE is a non-alcoholic red wine alternative,a rich, complex blend featuring aronia berries that provide a tannic structure. Balancing between the depth of a Bordeaux and the fruity richness of a Cabernet Franc, it’s designed to be savoured slowly for a truly unique experience.
BAEK’s third product will be a sparkling wine alternative which will launch early this year.
